• 2 Live Boston Lobsters
• 2 Brioche Buns
• 1 Fresh Lemon
• 25g Italian Flatleaf Parsley
1 Place live lobsters in the freezer for 20 mins.
2 Bring a pot of water to the boil and add salt. It should taste like the sea.
3 Drop the live lobsters into the pot and cook for 6-8 mins.
4 Once the lobsters are cooked, shock them in ice water to stop the cooking process.
5 Twist the head to detach it from the tail. Use a pair of kitchen scissors to make 2 cuts though the shell on the underside of tail.
6 Carefully remove the meat in one piece and cut into large chunks or leave it whole, if you prefer.
7 Spread softened butter on the cut sides of the brioche bun and place buttered side down onto hot pan to toast it slightly.
8 Meanwhile, heat up some butter in a pot and add lobster meat. Gently poach them at medium heat to avoid toughening the meat. Season to taste with salt and pepper and toss with chopped parsley.
9 Spread mayonnaise on buns and put the warmed lobster meat inside.
10 Squeeze lemon juice to finish.
