Calling all garlic lovers! A simple but incredibly flavourful dish, Global Live Seafood's Steamed Garlic Razor Clams recipe boasts tons of flavour using just a few ingredients. Serve it with a warm bowl of steamed rice and you’ve got yourself a delicious and satisfying meal! 

Prep Time: 15 minutes
Cook Time: 5 minutes
Serves 4

Ingredients:
 •  500g Live Scottish Razor Clams
 •  3 Cloves Garlic (finely minced)
 •  1 Stalk Spring Onion
 •  2 Red Chillies
 •  2 tbsp Vegetable Oil
 •  2 tsp Light Soy Sauce
 •  ½ tsp Sesame Oil

Directions:
1  To start, wash the razor clams under running water, and soak them for 5 minutes in a bowl of water with a tablespoon of salt. Rinse well.

2  Using a small knife, score along the razor clam’s shell and open them. Remove clam meat from the shells, and trim and discard the black portion (intestines) on the underside. Rinse them again under running water.

 Chop the meat into pieces (about 1 inch), and put them back into the shell. Set aside.

4  Heat oil in a pan on medium-high heat and stir-fry minced garlic till fragrant (not brown). Remove garlic and oil from the pan and set them aside in a bowl where the garlic will continue cooking on its own.

5  Steam the razor clams over medium heat for 2 - 3 minutes or until it turns opaque. Be sure to watch the timer as razor clams will turn rubbery in texture when over-cooked!

Once cooked, plate the razor clams and top them with garlic, garlic oil, light soy sauce and sesame oil. Garnish with chopped spring onions and chilli according to preference.
