Sockeye salmon, also known as red salmon, has the firmest, reddest flesh of the Pacific salmon species. Highly favoured for its rich, intense flavour and high vitamin B-12 and omega-3 content, the Sockeye is also leaner than most salmon, and contains more protein and fewer calories. Their firm, compact flesh makes it a suitable candidate for grilling, baking, slow-roasting and pan-frying.
